Make Delicious Dhokla : Why everyone loves Dhokla is a classic snack from Gujarat, known for its soft, light and slightly sour taste. It is perfect for breakfast, tea time, parties or as a snack in the afternoon.

- Take one cup of gram flour ( BASIN).
- Take half a cup of yogurt.
- Take one-fourth of the water or as required.

- Take one teaspoon of Enno Fruit Salt.
- Take a small green chilli, finely chopped.
- Ginger to taste or you can take a teaspoon of grated ginger.
- Salt to taste
- One tablespoon of oil
- A teaspoon of any kind of mustard you like
- Take five or six curry leaves.
- Take fresh coriander and mint for garnishing.
First step

First of all, in a bowl, add gram flour, curd, water, lemon juice, salt, grated ginger and chopped green chillies and mix well so that everything is well mixed.
Make sure that it is not too thick or too thin. It should be a little thick so that it sticks well on the spoon.
Second step
Before placing the dhokla on the steamer, add a teaspoon of Eno fruit salt and keep mixing lightly. The batter will become foamy which makes the dhokla soft and light.
Pour the batter into a greased steel or plate and steam it on medium heat for 12 to 15 minutes until a toothpick comes out clean.
Third step
While the dhokla is steaming, heat a tablespoon of oil in a small pan, add mustard seeds and wait for them to splutter, then add coriander leaves and pour it over the prepared dhokla.

Fourth step
Let the dhokla cool then cut it into squares or diamond shapes. Sprinkle with freshly chopped coriander and serve with green chutney or earthy tamarind chutney.
Essential Tips
If you want a sour taste, use fresh yogurt. Do not overmix the batter after adding the Eno fruit salt. Light folding is enough. Steam the dhokla on medium heat so that it cooks evenly.
The dhokla can be stored in the refrigerator for a day and can be reheated slightly before serving.
